Truffle Roasted



  1. Pre-heat oven to 425 or turn the grill to medium/high
  2. In a bowl, take the cleaned potatoes and toss with olive oil, salt, and pepper
  3. Place the seasoned potatoes in a large cast iron skillet (in one layer) and place 2 springs of thyme over the top
  4. Cook for 30 minutes or until the potatoes are tender and cooked through
  5. Remove from the oven, and add two tablespoons of the butter and fresh thyme leaves and toss to coat.
