Truffle Roasted Potatoes

- Cook Time: 30 minutes
- Pre-heat oven to 425 or turn the grill to medium/high
- In a bowl, take the cleaned potatoes and toss with olive oil, salt, and pepper
- Place the seasoned potatoes in a large cast iron skillet (in one layer) and place 2 springs of thyme over the top
- Cook for 30 minutes or until the potatoes are tender and cooked through
- Remove from the oven, and add two tablespoons of the butter and fresh thyme leaves and toss to coat.
