Sungold, Cucumber, and Corn Salad

Ingredients
  • 1 pint Sungold Tomatoes, halved
  • 2 Cucumber (halved lengthwise & thinly sliced)
  • 1 cup Sweet Corn (cooked & sliced off cob)
  • 6 ounce Feta, cut into 1/2" cubes
  • 2 tablespoon Lemon Juice
  • 3 tablespoon Olive Oil
  • Salt
  • Pepper (Freshly Ground)
Directions
  1. Combine the sungolds, cucumber, corn, and feta in a bowl.
  2. Add the lemon juice and olive oil.
  3. Toss to combine, until the ingredients are lightly coated.
  4. Season with salt and freshly ground black pepper to taste.
