Sungold, Cucumber, and Corn Salad

This salad is sure to brighten your day! Sweet sungold tomatoes and corn balance the tangy feta, crunchy cucumber, and lemon dressing.

  • 1 Half Pint Sungold Tomatoes, halved
  • 1 Cucumber, halved lengthwise and thinly sliced
  • 0.5 Cup Cooked corn kernels
  • 3 ounce Feta, cut into 1/2" cubes
  • 1 tablespoon Lemon Juice
  • 1.5 tablespoon Olive Oil
  • Salt
  • Pepper (Freshly Ground)
  1. Combine the sungolds, cucumber, corn, and feta in a bowl.
  2. Add the lemon juice and olive oil.
  3. Toss to combine, until the ingredients are lightly coated.
  4. Season with salt and freshly ground black pepper to taste.
