Simple Vegan Apple Crumble

Just as rustic as grandma's - but vegan! This apple crisp is simple, delicious, and flavorful. Pair it with some oat milk vanilla ice cream and you're in for a treat.

Ingredients
  • 6 Apples peeled, cored, and thinly sliced
  • 0.75 cup Sugar
  • 1 teaspoon Cinnamon, ground
  • 1 pinch Nutmeg (optional), ground
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Water
  • 1 cup Flour
  • 0.5 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.25 cup Oil (preferably neutral flavorless)
Directions
  1. In a medium-sized bowl, combine the flour, ½ cup of sugar, baking powder, ½ teaspoon cinnamon, and salt.
  2. Next, add the oil to the bowl. With a spoon or your fingers, rub the oil into the dry mixture until small crumbles form. Place into the fridge while you prepare the filling.
  3. Preheat the oven to 375 degrees and then grease an 8X11’’ baking dish with neutral oil. Set aside.
  4. Add the peeled and sliced apples to a large mixing bowl.
  5. In a smaller bowl, combine the remaining ¼ cup sugar, ½ tsp cinnamon, and nutmeg. Stir with a spoon or whisk to combine.
  6. Add in the water and lemon juice to the smaller bowl and stir to combine again.
  7. Pour the mixture over the sliced apples and stir to coat them all evenly. Then place them in the baking dish and spread them into an even layer.
  8. Retrieve your topping from the fridge and sprinkle it on top of the apples in an even layer.
  9. Place in the oven and bake for 40-45 minutes until the top is golden brown and the apples appear tender.
  10. Let rest for 10 minutes before serving. Enjoy!
