While oven is preheating, place salmon fillets on a baking sheet and lightly coat with olive oil
Season generously with salt and pepper
Cover the top of the fillet with Dijon mustard
Place in the oven and roast for 12-15 minutes, depending on desired doneness. (If you like your salmon more well done or browned on top, you can broil it for the last minute or two)
For the salad, wash your desired salad greens
Place in a bowl and toss to coat with olive oil, fresh squeezed lemon juice, salt, and pepper
Peel and divide two mandarin oranges and distribute throughout greens
For added texture, toss in some candied walnuts or almonds
