Simple Roasted Salmon with Side Salad

There are few simpler and healthier meals you can make than this roasted salmon with a side green salad. In the time it takes for the oven to heat up, you can get the salmon prepared and the lettuce washed. Once the salmon goes into the oven, you can finish putting the salad together and can even get the table set. The entire process from start to finish takes no more than 20 minutes. And who wouldn’t want to have dinner on the table in 20 minutes or less after a long day at work?! This is how we do fast food, and we think you should, too!

Ingredients
  • 2 pound Organic Scottish Salmon
  • Dijon Mustard
  • Olive Oil
  • Kosher Salt
  • Pepper
  • 1 container Lettuce
  • 2 Mandarins
  • 1 Lemon (squeezed)
  • Almonds
Directions
  1. Preheat oven to 425 degrees
  2. While oven is preheating, place salmon fillets on a baking sheet and lightly coat with olive oil
  3. Season generously with salt and pepper
  4. Cover the top of the fillet with Dijon mustard
  5. Place in the oven and roast for 12-15 minutes, depending on desired doneness. (If you like your salmon more well done or browned on top, you can broil it for the last minute or two)
  6. For the salad, wash your desired salad greens
  7. Place in a bowl and toss to coat with olive oil, fresh squeezed lemon juice, salt, and pepper
  8. Peel and divide two mandarin oranges and distribute throughout greens
  9. For added texture, toss in some candied walnuts or almonds
