Rolo's X Norwich Meadows Burger and Grill Kit

This grand grill platter has a little bit of everything for everyone. A note on timing: We recommend cooking the vegetables in the order listed  below. They are listed from longest preparation time to shortest. While everything will taste great room temperature, serving the summer squash (or eggplant) and beans fresh and warm off the grill will take your platter to the next level.

Ingredients
  • 1 Box Rolo's x Norwich Grill and Burger Kit
Directions
  1. Slice mozzarella and reserve for plating. Form burger patties for grilling. Slice brioche buns.
  2. Tear lettuce leaves into bite sized pieces (dress with chimichurri just before serving) or cut the head into wedges (top with the fancy sauce just before serving).
  3. For tender and smoky roasted peppers, grill them whole until heavily charred on the outside, and then let them cool in a covered bowl until ready to handle. (About 15 min.) They will steam in the bowl allowing the skin to peel off easily. Peel them, remove the seeds, slice into strips.
  4. Slice red onion crosswise into rounds, toss with salt and olive oil, and grill whole slices until charred and tender. Pull apart into delicate rings to serve.
  5. Grill scallions whole with olive oil and salt until tender and charred. Serve whole for the beautiful photograph or chop them up and scatter over the grand platter.
  6. Toss romano beans with olive oil and salt and grill them whole like you would asparagus. You can move these around on the grill frequently to achieve an even char all over. Taste periodically and remove once they’re tender and smoky but still slightly al dente.
  7. Slice summer squash (or eggplant, depending on box contents) lengthwise into ¼ inch to ½ inch strips. Season liberally with extra virgin olive oil and salt. Grill for a couple of minutes on each side, gently flipping only once, until you have tender ribbons with glorious grill marks.
  8. If you have a very large grill, start burgers while before squash. If your grill is smaller, burgers can be done last and rest while plating everything.
  9. Grab the largest platter you have, place the sliced mozzarella in the middle of the platter and arrange the grilled vegetables artfully around the cheese. Drizzle everything with a generous amount of chimichurri and torn basil.
  10. Place burgers and toasted buns on a separate platter with fancy sauce and pickles. Serve to your delighted and impressed guests.
