Roasted Brussels Sprouts

We know, we know, you hate Brussels sprouts.  You were probably tortured into eating eating mushy and bitter sprouts because they were "healthy."  This recipe is guaranteed to change your mind.  Easy to make, roasting brings out the sprouts' natural sweetness (yes, they can be sweet).  Even the kids will like them, we promise!

Ingredients
  • 2 lbs Brussels Sprouts
  • Olive Oil (to coat)
  • Salt
  • Pepper
Directions
  1. Preheat oven to 400 degrees.
  2. Clean the Brussels sprouts by cutting off the brown ends and removing any browning or yellow leaves.
  3. In a large bowl, lightly coat the Brussels sprouts in extra virgin olive oil, then season with salt and pepper
  4. Lay the Brussels sprouts on a sheet pan and roast for 35 - 40 minutes. A few times during cooking, shake the pan to flip and rotate the sprouts so they get nice and browned all around. It will also help cook them evenly.
  5. Sprinkle with a little more sea salt and serve hot.
