Pasta with Spinach and Lemon Dressing

  • Cook Time: 30 minutes
  • 1 pound Pasta (Trumpets)
  • 0.5 pound Baby Spinach
  • 2 Garlic Cloves, minced
  • 0.25 cup Lemon Juice
  • 1 teaspoon Lemon Peel, finely grated
  • 0.75 cup Whole Raw Almonds, chopped and toasted
  • 12 ounce Feta or Mozzarella Cheese, cut into 1-inch chunks
  • 0.5 cup Olive Oil
  1. Cook pasta in large pot of boiling salted water until al dente, stirring occasionally.
  2. While pasta is boiling, heat oil in heavy large skillet over medium heat
  3. Add garlic; sauté until soft, about 3 minutes
  4. Add lemon juice and lemon peel to pan
  5. Drain pasta; transfer to large bowl
  6. Place spinach and almonds atop hot pasta
  7. Pour hot lemon garlic mixture over spinach
  8. Toss until spinach is wilted, about 1 minute
  9. Top pasta with feta (or mozzarella!) cheese, sprinkle with salt and pepper
