Meatloaf

We love this very easy and super tasty meatloaf recipe. The only prep-work involved in this meatloaf recipe is the chopping of some onions and thyme. Otherwise, all it really involves is a little bit of sauteeing, some measuring, and some mixing. The result is a delicious meal the whole family will love.

Ingredients
  • 1 tablespoon Extra Virgin Olive Oil
  • 3 cup Yellow Onions
  • 1 teaspoon Thyme
  • 2 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 3 tablespoon Worchestershire
  • 0.33 cup Chicken Stock
  • 1 tablespoon Tomato Paste
  • 2.5 pound Ground Beef
  • 0.5 cup Bread Crumbs
  • 2 Eggs
  • 0.5 cup Ketchup
Directions
  1. Preheat the oven to 325 degrees
  2. Heat the olive oil in a medium saute pan
  3. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown
  4. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly
  5. In a large bowl, combine the ground beef, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense.
  6. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper
  7. Spread the ketchup evenly on top. Bake for 1 to 1 ¼ hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (Note: a pan of hot water in the oven, under the meat loaf, will keep the top from cracking)
  8. Serve hot
