Grilled Peach and Tomato Bruschetta

Grilling cherry tomatoes and peaches to the point of almost burnt concentrates their sweetness, while adding a nice charred flavor.  Once grilled, simply drop the peaches and tomatoes on a piece of garlicky, toasted bread, and you are guaranteed to win a lot of friends at your summer BBQ.  This dish can serve as a great appetizer or side dish.

Ingredients
  • 1 pint Sungold or Cherry Tomatoes (halved)
  • 1 pound Peaches (pitted and sliced)
  • 2 cloves Garlic
  • 1 Loaf (Sliced) Italian Bread
  • 2 tablespoon Olive Oil (divided)
  • Kosher Salt (to taste)
Directions
  1. Pre-heat a cast iron skillet or griddle over high heat or directly on a grill. Make sure the pan gets really hot before proceeding.
  2. While the skillet is warming, lightly season the halved tomatoes and sliced peaches with salt, and slice the bread. Lightly coat the slices of bread with olive oil.
  3. Once the skillet it hot, place the tomatoes and peaches sliced slide down and cook until almost burnt. Do not touch the tomatoes until they are ready to be removed from the pan.
  4. As the tomatoes cook, toast or grill the oiled bread until crispy, then rub the toasted bread with the whole garlic cloves leaving the bread with some delicious garlic flavor.
  5. When the tomatoes and peaches are finished, place them atop the bread, lightly drizzle with olive oil, and enjoy!
