Fully-Loaded Nachos

Nachos are one of our all time favorite party foods.  Completely customizable depending on your taste, the recipe below isn't so much a recipe, as a general guide.

Ingredients
  • Tortilla Chips
  • Salsa (to taste)
  • Cheddar Cheese, shredded
  • Black or Pinto Beans, cooked
  • Chicken, simply roasted and cut into cubes or shredded
  • Diced Tomatoes
  • Homemade Guacamole (see recipe)
  • Sour Cream
Directions
  1. Preheat Oven to 450
  2. Place a layer of nacho chips on the bottom of a pizza pan or circular baking dish. Top with a very generous layer shredded cheese, beans, and chicken. Place another layer of chips on top, followed by another layer of cheese, beans, and chicken. Continue layering until you think you have enough (I know, you never can have enough!)
  3. Place in oven and bake until the cheese is melted and just browning on top. This melting can happen pretty quickly so keep your eye on them. If the cheese looks melted but hasn't browned, turn on the broiler for a minute to brown the top layer
  4. Remove from the oven and top with the lettuce, diced tomatoes, homemade guacamole, sour cream (or creme fraiche), and salsa. Be sure to serve with extra guacamole and salsa on the side for dipping
