Berry Pancakes

Light and fluffy, these pancakes are worth getting out of bed for!  Feel free to use whatever berries you prefer.  And in the event that it is not berry season, feel free to use frozen - just be sure to thaw them in advance.

  • Prep Time: 5 minutes
  • Ready-in: 10 minutes
  • 2 cup Pancake Mix
  • 2 Eggs
  • 1.5 cup Milk
  • 1 cup Berries
  1. Beat eggs and milk together.
  2. Add dry pancake mix and blend well until there are no lumps. Fold in your berries of choice.
  3. Ladle mixture onto a lighly oiled griddle or pan (on medium low heat). When bubbles begin to form and pop, flip the pancakes and cook until both sides are golden brown.
