- Romanesco is an incredibly beautiful and flavorful Italian vegetable. Pale green in color, it has a more crunchy texture and more mild flavor than its cauliflower cousin. Romanesco can be used in most recipes calling for broccoli or cauliflower, but we love it simply roasted to bring out its natural flavors with just a little bit of shredded parmigiano reggiano cheese
