- Hachiya persimmons are more elongated than their cousins the Fuyu, and when allowed to very thoroughly ripen (when ripe, they should be almost squishy like an overripe tomato or even a ballon), they are as sweet as sugar, and have a pudding like texture. It is best to simply cut off the top and eat the inside with a spoon! When not ripe, the fruit with have an almost astringent quality, much like a very dry red wine.
