harvested manually in August and September.
They are then washed, selected, cut and cured in sea salt for
2-3 days. Everything is then crushed with wild
spices and jarred with EVOO. The result is an amazing spread perfect on a sandwich, cheese plate, or simply serving as a dip on its own.
