Casella's Prosciutto Speciali
- Chef Cesare Casella, a famous chef and educator (he is the dean of the Italian Studies department of the International Culinary Center in NY), is known for his experience and expertise with the cured meats. In producing this local prosciutto, he looked to his native Tuscany for inspiration, using pasture-raised, heritage breed pigs and the simple combination of salt, meat, and age to produce this remarkably nutty, salty, and just faintly sweet ham right here in the Northeast.
