This bundle has everything you will need to satisfy your crowd.  It includes one soft cheese (Harbison), one amazing washed rind cheese (Willoughby or Moses Sleeper), and one semi-firm cheese (Pyrenees Brebis) and two harder cheeses (Cabot Clothbound Cheddar and Parmigiano Reggiano).  More details on the cheese selection in order of firmness is listed below as well as the additional items included in the bundle.

 Cheese Selection

  • Harbison (Jasper Hill Farms):  Winner of the "Best American Cheese" award at the World Cheese Awards, this is a soft-ripened, creamy, spruce bark wrapped cows’ milk cheese.  It's characterized by a sweet milky flavor that finishes with meaty, smoky, juniper notes imparted by the bark, which is harvested from the surrounding forest. (Pasteurized)
  • Pyrenees Brebis (Herve Mons): This is a delicious semi-firm sheep’s milk cheese that has been produced in the southern Pyrénées region of France for over 1,000 years.  These beautiful coffee-colored wheels are rich and creamy with a hint of toasty caramel sweetness.  Notes of citrus, fresh grass, flowers, and vanilla are also present in the paste of this ancient and celebrated cheese, which also happens to be a favorite of our cheese-obsessed founder Mike.   • Cabot Clothbound Cheddar (Jasper Hill Farms): This cow's milk cheese has been dubbed as addictive as narcotics by certain devoted fans. It's rich and caramelly, speckled with bits of crystalline crunchy goodness. (Pasteurized)
  • Parmigiano Reggiano DOP (Emilia Romagna): Aged for at least 24 months and hand selected from small family farmers, this raw, cow's milk cheese has a rich, almost sweet flavor. (Raw)
  • Three's Brewing Mini Moses Sleeper (Jasper Hill Farms): Moses Sleeper was Greensboro, Vermont's own local Revolutionary War hero, and is the inspiration for this limited edition, decadent and buttery washed rind cheese made exclusively for Saxelby Cheesemongers by Jasper Hill Farm. The undulating fluffy folds of the bloomy rind—think something along the lines of brie or camembert—encase a creamy, pudding-like paste that tastes of creme fraiche, cauliflower, truffles, and barnyard.  This special edition is given an initial wash of Wandering Bine Saison from Threes Brewing in Brooklyn. Giving an initial wash to a bloomy rind cheese helps stimulate the growth of beneficial microbes which help develop the rind and enhance some of the yeastier, funkier, fruitier flavors in the cheese
