Hi, I’m Brooke, I’m a registered dietitian, author and mom of two girls. BROOKE'S SEPTEMBER BUNDLE

This time of year I need anything I can find to make my life a bit easier! As a working mom with two young kids, I need healthy, quick and delicious meals that also meet the needs of everyone in the family - not an easy feat!  This bundle is a lifesaver for me and my whole family loves it!

With this bundle I make a short cut Bolognese sauce that my husband and I eat over spaghetti squash while my kids eat on top of their favorite trumpet pasta. I add sautéed mustard greens and steamed string beans so everyone has a good green veggie option to chose from!  I love using the leftover mustard greens in an egg scramble in the morning too.

We go through a crazy amount of produce in our house, it’s always out as part of breakfast for my kids and on the kitchen counter in the afternoon as a healthy snack option that my girls can help themselves to.  Pears are a go-to for us and my oldest likes to top plain Greek yogurt with applesauce to flavor it herself.  We love the cheddar bites to put in my littlest ones lunch box and I’ll also throw them on top of a salad that I bring to work.

Some days life is even more hectic, so I love having the chocolate chip oatmeal cups around to throw in my bag on the run. On the weekends it’s great to have that sweet but not too sweet safety net of a good snack for myself or the kids as we’re shuttling to one sporting event after another!  And I keep the pink sea salt chocolate bar in my office refrigerator, which is a perfect partner to my afternoon decaf latte!

Sauce

Ingredients:

1 tbsp coconut oil

1 medium yellow onions, finely diced

1 lb grass-fed ground beef

1 16oz jar of Nonna’s Leafy Sauce

Directions:

In a large sauté pan, heat the oil over medium-high heat. Add the onion and garlic and sauté until onions are almost translucent, about 5 minutes. Add ground beef, breaking up clumps with a wooden spoon, and sauté until meat is browned, about 8 minutes. Pour the sauce over the meat and stir until fully heated through. 

Serve over spaghetti squash or pasta of your choice.

 

Spaghetti Squash

Ingredients:

1 medium spaghetti squash (approx. 2 lbs)

Directions:

Preheat oven to 400 degrees F.

Directions: 

With a sharp knife, poke holes in the squash all over. Place on a baking sheet and cook in the oven (flipping halfway through) for about an hour to 90 minutes, or until it’s easy to poke with a fork. Let cool and cut in half lengthwise. Carefully scoop out seeds and discard. Then take a fork and scrap the flesh of the squash, shredded the flesh until you’ve almost reach the skin. Place in a bowl and serve with a sauce or topping of your choice.
